Summer Thyme Gin has been rested in a French Oak barrel for seven months, which has been used to age Chardonnay and then Brett Saison Beer. Earthy spice, honey and candied citrus. Almost violet-crumble like. Incredibly smooth and delivered at a high proof of 48% ABV
The French Oak wood has contributed to deliver an incredible colour, sweetness, weight and texture.
About the barrel
The 200L barrel was made from French Oak and first came from a winery in country Victoria used to age Chardonnay. Wolf of the Willows then picked it up to use as a fermentation vessel for 100% Brettanomyces Bruxellensis ferments (known as Brett), which create their own microflora environment in the wood. The beer fermented in these barrels produced their Barrel fermented Brett Saison Beer. We then aged our Summer Thyme Gin in the barrel for seven months.
